Demel was founded in Vienna in 1786 and later became an official pastry supplier to the Habsburg imperial court. It offers the quintessential Viennese Konditorei experience, combining an elegant pastry shop, confectionery and refined coffeehouse. Its Sachertorte and Kaiserschmarrn are especially well known.

Franz Sacher created the chocolate cake in 1832, while his son Eduard later refined it during his apprenticeship at Demel. Both Demel and Hotel Sacher consequently claimed he right to sell the "Original Sachertorte. After a lengthy legal battle, an out-of-court settlement was reached in 1963: Hotel Sacher retained the exclusive right to use the name “Original Sacher-Torte,” while Demel was permitted to sell its version as the “Eduard-Sacher-Torte,” identified by a triangular chocolate seal.
